Mitja Sirk works in Cormòns, in the heart of the Collio Goriziano, within a family history that unites hospitality, cuisine, and territory. La Subida has been the home of the Sirk family for generations: a place where people, nature, and Friulian culture are deeply intertwined, and from which Mitja's winemaking journey also originates.

His work focuses on Friulano, the symbolic grape variety of these border hills. Old vines, ponca soils, spontaneous fermentations, and a minimalist touch give rise to crisp, territorial white wines that tell the story of Collio without forcing it: not as a constructed style, but as the living identity of a place.
