Mitja Sirk's Collio Bianco "Ca' Savorgnan" 2023 is a Collio DOC from Friulano grapes, born from an old vineyard on the hills of Cormòns.

Ca’ Savorgnan 2023 is one of Mitja Sirk's most profound interpretations of Friulano. It originates in the Collio Goriziano, in Cormòns, a border area where the wine carries a Slovenian spirit, Friulian culture, and ponca soils. Here, Mitja works with a very precise idea: not to multiply grape varieties, but to delve into the identity of Friulano, allowing each vineyard to tell a different story of the same territory.

The wine comes from the Ca' Savorgnan vineyard, a historic plot with 95-year-old vines. The grapes are whole-bunch pressed, allowed to ferment spontaneously, and aged in new barrels on their lees until bottling in May. It is a wine of substance and depth, linked to a specific vineyard and an essential production philosophy: Collio, Friulano, old roots, and a hand that guides without overpowering.

Mitja Sirk works in Cormòns, in the Collio Goriziano, within a family history deeply linked to hospitality and the land: that of La Subida, a place of cuisine, hospitality, and Friulian culture. His journey into wine began early, also through his relationship with Josko Gravner and experiences gained in some major European wineries, but then found a very personal direction: focusing on Friulano, the symbolic grape variety of the territory, seeking out old vines, ponca soils, and essential winemaking techniques. Mitja Sirk's wines offer a contemporary yet respectful interpretation of Collio: border, family, experience, precision, and the desire to let Friuli speak without masks.
