Vitovska "Kamen" 2021

Kamen is the Vitovska that Zidarich produces using a Carst stone vinification.

After completing the construction of the new winery in 2011, Benjamin Zidarich decided to further tie himself to his territory, which year after year continued to fascinate him. He thus decided to commission local artists to build vats from Carst stone, which he would later begin to use for the vinification of this particular Vitovska. The white label refers to the purity and roughness of the local stone, and the wine expresses the strong connection to the territory to which Benjamin is indissolubly linked.

The Winery: Zidarich

Benjamin Zidarich's story began in 1988, and he soon became one of the leading exponents of Karst viticulture. The territory is Prepotto, a hamlet in the municipality of Duino Aurisina, nestled among low hills not far from Trieste. As a spokesman for an authentic terroir and history, Benjamin Zidarich has been able to build a winery and a territory by understanding the native Karst grape varieties and bringing them to their fullest expression. Vitovska, Malvasia, Sauvignon, and Terrano are the grape varieties cultivated in the Karst rock, a rock that is the wine itself, as it is capable of influencing all organoleptic and sensory aspects. A proponent of clean viticulture, Zidarich seeks the maximum expression of the grape varieties through an entirely natural transformation during vinification in the cellar, which proceeds without the use of yeasts, filtration, or fining.
