Wasenhaus Spätburgunder is a red wine made from Pinot Noir grapes, coming from the Baden region in Germany.

This area is characterized by a unique microclimate and complex soils that range from granite to calcareous marl and volcanic soil. These conditions allow for the production of high-quality grapes, ideal for making elegant and refined wines. Wasenhaus adopts a low-intervention approach to winemaking, aiming to best express the terroir. The grapes are harvested manually and carefully selected. Fermentation takes place with 90% destemmed grapes and 10% whole clusters. This method helps maintain the wine's freshness and aromatic complexity. The wine is then aged in neutral oak barrels for one year, followed by six months in stainless steel.

Wasenhaus is a winery located in the Baden region of Germany, founded by Alex Götze and Christoph Wolber. The two met in Beaune, France, during their studies and worked at renowned Burgundy wineries such as Comte Armand, Bernard van Berg, Leflaive, and de Montille. The winery was founded in 2016 when Alex and Christoph decided to leverage the potential of the old vineyards of Baden, a region characterized by a unique microclimate and complex soils that vary from granite to calcareous marl and volcanic soil. Their philosophy is based on organic farming with biodynamic practices and low-intervention winemaking, striving to best express the finesse and elegance of their wines. Wasenhaus focuses primarily on grape varieties such as Pinot Noir (Spätburgunder), Pinot Blanc (Weissburgunder), and Chardonnay, grown in small parcels near Staufen im Breisgau. Their wines are known for their lightness, clarity, and finesse, and have quickly gained a reputation for excellence in the German wine scene.
