Domaine Rousset Peyraguey's 2012 Sauternes "Creme de Tete" is produced using biodynamic farming in Preignac, in the Gironde department.
Domaine Rousset Peyraguey follows the biodynamic principles of Rudolf Steiner, and among the rows, vegetation thrives in a thousand ways, with medicinal herbs, flowers, and wild greens. The grapes used are typical of the area: a majority of Semillon and Sauvignon, with Muscadelle completing the blend. Harvesting is carried out as late as possible, after the onset of Botrytis Cinerea. The Sauternes Creme de Tete possesses an astonishing richness, a sweetness that is never cloying because it is well-balanced by the fresh acidity that encourages another sip, especially when paired with superb cheeses.
