Efflorescence is Marie Courtin's Extra Brut Champagne made with 100% Pinot Noir.
We are in the village of Polisot, and Efflorescence Champagne comes from a massal selection of Pinot Noir grapes harvested from vineyards that have always been organically farmed, sometimes supplemented by biodynamic practices. The vinification takes place in barriques, but despite this, it is the fruit, with hints of small red berries, that prevails and remains the protagonist, never tainted by woody notes.
