Charles Dufour's BdN Extra Brut "Bistrotage" 14+1 Champagne is made from 100% Pinot Noir grapes.
The BdN Extra Brut "Bistrotage" 14+1 Champagne fully reflects the character of the Cote de Bars and the vineyards owned by Charles' mother, Francoise Martinot. It is made from Pinot Noir grapes harvested in the 2014 vintage and 20% reserve wines from the 2011 and 2012 vintages. The vinification is split between steel and wooden vats, and during the disgorgement phase, the wine was not dosed and no sulfur dioxide was added.

The Winery: Charles Dufour
Charles Dufour's project was born with the aim of enhancing the terroir of Landreville, one of the villages in the Cote des Bars. Charles manages the organic cultivation of the vineyards and the vinification process, which follows a path without specific oenological interventions and uses only indigenous yeasts, with the aim of exalting the characteristics of the soil and exposure. The 6 hectares of vineyards are spread around the villages of Landreville, Celles-sur-Ounce, and Essoyes. Recently, Charles has also started vinifying the grapes of his mother, Francoise Martinot; the Champagne in question is called Bistrotage and is absolutely unmissable!
